Fall salad season deserves more than a few cold leaves on a plate. This Baked Fall Harvest Bean Salad brings warm roasted vegetables, crisp green beans, fluffy quinoa, juicy grapes, maple-glazed pecans, and fresh herbs together under a bright thyme vinaigrette.

We gave the harvest combination a few thoughtful updates to make it friendlier to a Low-FODMAP routine. Green beans take center stage, canned chickpeas are kept to a modest portion, garlic-infused olive oil brings savory flavor without garlic pieces, and scallion green tops replace shallot.

Serve it while the roasted vegetables are still warm and you get the best of both worlds: caramelized autumn flavor with plenty of freshness and crunch. Make it for lunch, bring it to a fall gathering, or prep the components ahead and toss everything together when you are ready to eat.


Ingredients

Makes: 4 servings

For the Baked Harvest Bean Salad

2 cups fresh green beans, trimmed and halved
1 1/2 cups Japanese pumpkin or kabocha squash, peeled and cut into small cubes
1 tbsp olive oil, divided
1/2 cup canned chickpeas, thoroughly drained and rinsed
1 tsp garlic-infused olive oil
10 pecan halves
1 tsp pure maple syrup
1 pinch cayenne pepper
1 cup cooked quinoa, cooled slightly
3 1/2 oz mixed salad greens
1/2 cup seedless red grapes, halved
1/4 cup fresh parsley, chopped
to taste sea salt and black pepper

For the Maple-Thyme Vinaigrette

1 tsp whole-grain mustard, checked for onion and garlic
2 tsp pure maple syrup
2 tsp apple cider vinegar
2 tsp extra-virgin olive oil
1 tsp fresh thyme leaves
2 tbsp finely sliced scallion green tops
2 tsp fresh lemon juice
to taste sea salt and black pepper

  • Large rimmed baking sheet
  • Parchment paper
  • Small oven-safe dish for the pecans
  • Small jar or bowl for the vinaigrette
  • Whisk or fork
  • Large serving bowl
  • Salad servers or large spoons

Step-by-Step Instructions

  1. 1

    Heat the oven

    Preheat the oven to 400°F. Line a large rimmed baking sheet with parchment paper so the vegetables have plenty of room to roast.

    Prep the vegetables

    Add the green beans and cubed Japanese pumpkin to the prepared baking sheet. Drizzle with 2 teaspoons of olive oil, season lightly with salt and pepper, and toss until evenly coated.

    Roast until golden

    Roast the vegetables for 25 to 30 minutes, turning them halfway through. The pumpkin should be tender with golden edges and the green beans should be lightly blistered while still holding their shape.

    Crisp the chickpeas

    Pat the drained chickpeas dry, then toss them with the remaining teaspoon of olive oil and the garlic-infused olive oil. Spread them on one side of the baking sheet during the final 20 to 25 minutes of roasting, stirring once, until lightly crisp at the edges.

    Toast the maple pecans

    Place the pecan halves in a small oven-safe dish with 1 teaspoon maple syrup and a pinch of cayenne. Bake for about 6 to 7 minutes, then remove them from the oven and let them cool before roughly chopping.

    Shake up the vinaigrette

    Add the mustard, maple syrup, apple cider vinegar, olive oil, thyme, scallion green tops, lemon juice, salt, and pepper to a small jar. Close tightly and shake until combined, or whisk everything together in a small bowl.

    Build the harvest salad

    Add the mixed greens, cooked quinoa, roasted green beans, pumpkin, chickpeas, grapes, parsley, and maple pecans to a large serving bowl. Drizzle with the vinaigrette and toss gently so the warm vegetables mingle with the fresh ingredients without crushing the greens.

    Serve while the vegetables are warm

    Taste and adjust the seasoning before serving. Divide the salad among four plates and enjoy it warm, or let the roasted components cool for a room-temperature fall lunch.


Low-FODMAP Notes

The original harvest salad inspiration includes garlic powder, shallot, apple, a larger quantity of chickpeas, and other ingredients that may be harder to fit into a Low-FODMAP meal. Here, garlic-infused olive oil, scallion green tops, grapes, green beans, and carefully portioned canned chickpeas keep the same sweet, savory, herby character with more thoughtful ingredient choices.

Drain and rinse canned chickpeas thoroughly, divide the finished salad into four servings, and check your mustard and other packaged ingredients for added garlic or onion. Quinoa is naturally gluten-free, but choose certified gluten-free products when cross-contact is a concern.
