For the Buttermilk Cornbread

1 tbsp fresh lemon juice
about 1 cup lactose-free milk, enough to reach the 1-cup line with the lemon juice
1/2 cup lactose-free unsalted butter, melted and slightly cooled, plus more for the pan
1/4 cup granulated sugar
1/4 cup packed light brown sugar
2 large eggs, at room temperature
1 cup certified gluten-free yellow cornmeal, fine or medium grind
1 cup certified gluten-free 1-to-1 baking flour with xanthan gum, rice-based and without inulin or bean flour
1/2 tsp baking soda
1/2 tsp fine sea salt

Step-by-Step Instructions

    Heat the oven and prepare the pan

    Preheat the oven to 375°F. Grease an 8-inch square baking pan with lactose-free butter, or line it with parchment paper and lightly grease the exposed sides.

    Make the lactose-free buttermilk

    Pour the lemon juice into a 1-cup liquid measuring cup, then add lactose-free milk until it reaches the 1-cup line. Stir and let the mixture stand for 5 minutes while you measure the remaining ingredients.

    Mix the butter and sugars

    Pour the melted butter into a large mixing bowl. Whisk in the granulated sugar and brown sugar until the mixture looks smooth and glossy.

    Add the eggs and buttermilk mixture

    Whisk in the eggs one at a time until fully blended. Stir the baking soda into the lactose-free buttermilk mixture, then whisk it into the bowl.

    Add the cornmeal, gluten-free baking flour, and salt. Fold gently until no dry pockets remain, stopping as soon as the batter is combined so the crumb stays tender.

    Bake for 22 to 30 minutes, until the top is golden and a toothpick inserted in the center comes out clean or with a few moist crumbs. Begin checking at 22 minutes because gluten-free flour blends can bake at slightly different rates.

    Let the cornbread cool in the pan for at least 10 minutes before cutting it into 9 squares. Serve warm with lactose-free butter, maple syrup, or your favorite savory meal.
