Gluten-free Apple Cider Donuts

ā± 45 minutes total šŸ½ 16 donuts ⭐ Fall snack

The smell of cider and cinnamon coming from the oven is one of those unmistakable signs that fall baking has officially started. These Apple Cider Donuts bring that cider-mill feeling home with a tender cake-style center and a generous coating of warm spiced sugar.

For this version, the classic flour and dairy ingredients get a few practical changes. A 1-to-1 gluten-free baking flour, lactose-free milk, and lactose-free butter keep the recipe gluten-free and lactose-free while letting reduced apple cider remain the star.

The best part happens just after baking, when the still-warm donuts get brushed with melted butter and rolled in cinnamon, nutmeg, and cardamom sugar. Make a batch for a crisp afternoon, weekend brunch, or the moment you decide your kitchen needs to smell like fall.

Ingredients

Makes: 16 baked apple cider donuts

For the Apple Cider Donuts

1 1/2 cups apple cider
1 large egg, room temperature
1/3 cup granulated sugar
1/3 cup packed light brown sugar
3 tbsp lactose-free unsalted butter, melted and slightly cooled
1/2 cup lactose-free milk
1 tsp pure vanilla extract
1 3/4 cups 1-to-1 gluten-free baking flour with xanthan gum
1 tsp gluten-free baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/8 tsp ground cardamom

For the Spiced Sugar Coating

1 cup granulated sugar
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cardamom
1/2 cup lactose-free unsalted butter, melted

Materials Needed

  • Nonstick saucepan
  • Measuring cups and measuring spoons
  • Two large mixing bowls
  • Whisk and rubber spatula
  • Donut pan
  • Nonstick cooking spray or lactose-free butter for greasing
  • Piping bag or large zip-top bag, optional
  • Wide shallow bowl for the spiced sugar
  • Pastry brush
  • Wire cooling rack

Step-by-Step Instructions

  1. 1

    Reduce the apple cider

Pour the apple cider into a nonstick saucepan and simmer uncovered over medium heat until it reduces to about 1/3 cup. This concentrates the cider flavor, so give it time to become noticeably thicker before removing it from the heat.

  2. 2

    Let the cider cool

Pour the reduced cider into a heat-safe container and let it cool to room temperature. Avoid adding it to the batter while hot because it can affect the egg and the texture of the donuts.

  3. 3

    Prepare the pan

Preheat the oven to 350°F. Lightly grease a donut pan with cooking spray or a thin layer of lactose-free butter so the baked donuts release cleanly.

  4. 4

    Mix the wet ingredients

In a large bowl, whisk together the egg, granulated sugar, brown sugar, melted lactose-free butter, lactose-free milk, and vanilla. Mix until the ingredients look smooth and evenly combined.

  5. 5

    Whisk the dry ingredients

In a separate bowl, whisk together the gluten-free flour, baking powder, baking soda, cinnamon, nutmeg, and cardamom. Break up any visible flour clumps as you mix.

  6. 6

    Finish the batter

Add the dry ingredients and cooled reduced cider to the wet mixture. Fold gently until no large pockets of dry flour remain, stopping as soon as the batter comes together.

  7. 7

    Fill the donut pan

Spoon or pipe the batter into the prepared cavities, filling each about halfway. A piping bag or zip-top bag with one corner snipped off makes this step especially neat.

  8. 8

    Bake until set

Bake for about 10 minutes, or until the tops spring back lightly and a toothpick inserted into a donut comes out clean. Let the donuts cool in the pan for about 5 minutes before moving them to a wire rack.

  9. 9

    Mix the fall-spiced sugar

While the donuts are cooling, stir together the granulated sugar, cinnamon, nutmeg, and cardamom in a wide shallow bowl. Melt the lactose-free butter separately and keep a pastry brush nearby.

  10. 10

    Coat and serve

Brush each warm donut lightly with melted butter, then roll or press it into the spiced sugar until evenly coated. Serve while slightly warm for the softest texture and freshest cinnamon-cider flavor.

Low-FODMAP Notes

These Apple Cider Donuts are adapted to be gluten-free and lactose-free, but they should not be considered a Low-FODMAP recipe as written. Apple cider is made from apples, which can contribute FODMAPs, and reducing the cider concentrates its flavor rather than removing those carbohydrates.

If you follow a Low-FODMAP eating plan, check serving guidance with your healthcare provider, registered dietitian, or a trusted Low-FODMAP resource before including apple cider in your routine. Also check your gluten-free flour blend for added ingredients that may not fit your individual needs.

Because apple cider creates the signature flavor of this recipe, replacing it would substantially change the finished donuts. Rather than make an uncertain Low-FODMAP claim, this version keeps the apple cider and clearly identifies that consideration.

Recipe Tips

  • Do not rush the cider reduction. Reducing it to about 1/3 cup concentrates the apple flavor without adding too much liquid to the batter.
  • Choose a baking-friendly gluten-free blend. A 1-to-1 flour blend with xanthan gum gives the donuts better structure than a single gluten-free flour used on its own.
  • Mix only until combined. Once the dry ingredients disappear into the batter, stop stirring to help keep the baked texture soft and cake-like.
  • Coat them while they are still a little warm. The melted butter and spiced sugar cling beautifully when the donuts have cooled just enough to handle.
