For the Peanut Noodles

8 oz gluten-free rice noodles
1/3 cup smooth natural peanut butter, with no high-FODMAP sweeteners added
2 tbsp certified gluten-free tamari
1 1/2 tbsp unseasoned rice vinegar
1 tbsp packed brown sugar
1 tbsp garlic-infused olive oil
1 tsp toasted sesame oil
1/2 tbsp freshly grated ginger
2 to 4 tbsp warm water, plus more as needed
1/8 tsp crushed red pepper flakes, optional

For the Fresh Finish

1/4 cup fresh cilantro leaves, roughly chopped
2 tbsp scallion green tops, thinly sliced
2 tbsp roasted peanuts, roughly chopped
1 tsp sesame seeds, optional
1 lime, cut into wedges for serving

Step-by-Step Instructions
