Ingredients

Makes: 4 servings

For the Chicken Katsu

1 1/4 lb boneless, skinless chicken breasts
3/4 tsp fine sea salt
1/4 tsp freshly ground black pepper
1/3 cup certified gluten-free all-purpose flour blend
2 large eggs
1 tsp neutral oil, for whisking into the eggs
1 1/2 cups certified gluten-free panko breadcrumbs
about 1/2 cup neutral high-heat oil, plus more as needed for shallow frying

For the Quick Katsu-Style Sauce

3 tbsp ketchup without garlic or onion
1 tbsp gluten-free tamari
2 tsp pure maple syrup
1 tsp rice vinegar

For Serving

2 cups finely shredded green cabbage
4 lemon wedges
optional warm cooked white rice, for serving

Materials Needed

  • Cutting board and sharp knife
  • Meat mallet or rolling pin
  • Parchment paper or plastic wrap for pounding
  • Three shallow bowls or trays
  • Whisk or fork
  • Large heavy skillet
  • Tongs
  • Wire rack set over a sheet pan or a paper towel-lined plate
  • Small bowl for the sauce

Step-by-Step Instructions

  1. 1

    Butterfly the chicken

    Slice each chicken breast horizontally, stopping before cutting all the way through, then open it like a book. If the breasts are very large, divide them into four cutlet-size pieces.

    Pound to an even thickness

    Place the chicken between sheets of parchment paper or plastic wrap. Pound gently to about 1/4 to 1/2 inch thick so the cutlets cook at an even pace.

    Season and set up the breading

    Season both sides of the chicken with salt and pepper. Put the gluten-free flour in one shallow bowl, whisk the eggs with 1 teaspoon neutral oil in a second bowl, and place the gluten-free panko in a third.

    Bread each cutlet

    Coat one piece of chicken lightly in flour and shake off the excess. Dip it into the egg mixture, then press it into the panko until both sides are evenly covered.

    Mix the katsu-style sauce

    Stir together the garlic-free and onion-free ketchup, tamari, maple syrup, and rice vinegar. Set the sauce aside while you fry the chicken.

    Heat the frying oil

    Add enough neutral oil to cover the bottom of a large heavy skillet by about 1/4 inch. Heat over medium to medium-high until a breadcrumb dropped into the oil sizzles steadily without burning.

    Fry until crisp and cooked through

    Cook the cutlets in batches without crowding the pan, about 3 to 4 minutes per side depending on thickness. The coating should be deep golden and the thickest part of the chicken should reach 165°F or 74°C.

    Drain and rest

    Transfer the cooked cutlets to a wire rack set over a sheet pan, or briefly to a paper towel-lined plate. Let them rest for 3 to 5 minutes so the juices settle before slicing.

    Slice and serve

    Cut the chicken crosswise into strips and plate with shredded cabbage, lemon wedges, and warm rice if using. Spoon or drizzle the katsu-style sauce to taste and serve while the crust is still crisp.


Low-FODMAP Notes

Classic chicken katsu is often made with wheat flour, wheat-based panko, and bottled tonkatsu sauce. Here, certified gluten-free flour and panko replace the wheat-based breading, while a quick katsu-style sauce avoids relying on products that may contain garlic, onion, or wheat.

Read labels closely on the ketchup, tamari, flour blend, and panko. Choose products that match your needs, and avoid seasoning blends or condiments with added garlic powder, onion powder, or other ingredients you personally limit.
