For the Fresh Ube Ice Cream

1 cup cooked mashed purple yam, also called ube, cooled
1 1/2 cups lactose-free whole milk, divided
1 1/4 cups granulated sugar
3 cups lactose-free heavy cream or lactose-free whipping cream
1 to 1 1/2 tbsp ube extract, gluten-free if needed
1/8 tsp fine sea salt

If Using Ube Powder Instead

2 tbsp pure ube powder
1 cup water
Note use the powder and water in place of the 1 cup cooked mashed ube

Optional Topping

2 tbsp toasted unsweetened coconut flakes, divided

Step-by-Step Instructions

    Freeze the ice cream bowl

    Make sure the bowl for your ice cream maker is fully frozen before you start. Many models need 6 to 24 hours, so this is a good step to do ahead.

    Peel the purple yam and cut it into chunks. Steam or boil until fork-tender, about 20 to 30 minutes, then drain well and let it cool slightly.
