Ingredients:

For the Chocolate Luv-a Cakes

  • 4 ounces dairy-free dark chocolate
  • 1/2 cup lactose-free butter or dairy-free butter alternative
  • 2 large eggs, room temperature
  • 1/4 cup granulated sugar
  • 2 tablespoons gluten-free all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Optional Toppings

  • Raspberries (whole, fresh)
  • Powdered sugar (light dusting on top and plate)

For preparing the ramekins

  • Dairy-free or lactose-free butter
  • Cocoa powder for dusting

Tools you will need:

  • 4 ramekins (4-ounce)
  • Mixing bowls
  • Whisk
  • Microwave-safe bowl or small saucepan
  • Rubber spatula
  • Baking sheet
  • Measuring cups and spoons

How to Make It:

  1. Preheat your oven to 425°F. Generously grease the ramekins with butter, then dust lightly with cocoa powder and place them on a baking sheet.

  2. Add the chocolate and butter to a microwave-safe bowl and melt in short bursts, stirring until smooth. Let the mixture cool slightly so it stays silky.

  3. In a separate bowl, whisk the eggs and sugar just until combined. Stir in the melted chocolate, vanilla, and salt, then gently fold in the gluten-free flour and cocoa powder.

  4. Divide the batter evenly between the ramekins. Bake for 12 to 14 minutes, until the edges are set, but the centers still look soft and glossy.

  5. Let the cakes rest for one minute, then serve warm straight from the ramekins or carefully invert onto plates. That molten center should spill just enough to feel dramatic and irresistible.
