Let’s be honest. Sometimes you just want pizza without wondering how your stomach will feel after. This version gives you that classic cheesy, saucy comfort but in a way that feels light, safe, and actually enjoyable.
It’s crisp on the edges, melty in the center, and packed with fresh basil flavor that makes every bite feel like a treat. No guesswork, no stress, just a pizza you can confidently say yes to.

Ingredients:
- 1 gluten-free pizza crust (10–12 inches)
- ½ cup canned crushed tomatoes (no onion or garlic added)
- 1 tbsp garlic-infused olive oil (garlic flavor, low-FODMAP)
- ½ tsp dried oregano
- ¼ tsp salt
- 1 cup lactose-free mozzarella or dairy-free mozzarella alternative (melts and browns well)
- 6–8 fresh basil leaves
- 1 tbsp grated lactose-free parmesan or dairy-free hard cheese (optional, light sprinkle)
- 1 tsp olive oil (for finishing)
Materials needed:
- Baking tray or pizza stone
- Small mixing bowl
- Spoon
- Oven
How to Make It:
Preheat the oven
Preheat your oven to 220°C (425°F) and place your baking tray or pizza stone inside while it heats. Starting with a hot surface helps the crust turn crisp instead of soft.Make the sauce
In a small bowl, mix the crushed tomatoes, garlic-infused olive oil, oregano, and salt. Stir until combined. It should smell light and fresh, not heavy.Assemble the pizza
Place your gluten-free crust on the hot tray and spread the sauce evenly, leaving a small border around the edges. Keep the layer thin so everything bakes evenly.Add the cheese
Sprinkle the mozzarella evenly over the top, then add a light sprinkle of parmesan if using. It may look like a lot at first, but it melts down into a smooth layer.Bake until golden
Bake for 10 to 12 minutes until the edges are golden and the cheese is melted and slightly bubbly. Your kitchen should start to smell warm and comforting.Check the crust
Lift the edge slightly to check the bottom. It should feel firm and lightly crisp. If not, give it another minute or two.Finish and serve
Remove from the oven and top with fresh basil, then drizzle with a little olive oil. Let it rest for 1 to 2 minutes before slicing so everything settles nicely.
