Ingredients:

Protein & Veggies

  • 1 pound boneless, skinless chicken breast, diced
  • 1 cup fresh or frozen corn kernels (low-FODMAP portion per serving)
  • 1 cup diced carrots
  • 2 cups diced potatoes (white or Yukon gold)
  • 1 cup green onion tops only, sliced (no white parts)
  • Bacon bits (optional)

Soup Base

  • 3 cups low-FODMAP chicken broth (no onion or garlic)
  • 1 cup lactose-free milk or unsweetened almond milk
  • 1/2 cup lactose-free heavy cream or canned coconut milk (light)
  • 2 tablespoons garlic-infused olive oil

Seasoning

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme

Tools you will need:

  • Large soup pot or Dutch oven
  • Cutting board and knife
  • Wooden spoon
  • Measuring cups and spoons

How to Make It:

  1. Cook the chicken
Heat the garlic-infused olive oil in a large pot over medium heat. Add the diced chicken and cook for 4 to 5 minutes until lightly golden and cooked through. Remove and set aside.
  2. Build the soup base
In the same pot, add carrots and potatoes. Stir and cook for 2 minutes. Pour in the chicken broth and bring to a gentle boil.
  3. Simmer until tender
Reduce heat and simmer for 12 to 15 minutes until the potatoes are fork-tender. This step builds the cozy chowder texture.
  4. Make it creamy
Stir in the lactose-free milk, cream alternative, corn, cooked chicken, salt, pepper, paprika, and thyme. Simmer for another 5 to 7 minutes until warmed through.
  5. Finish and serve
Taste and adjust seasoning if needed. Top with green onion tops and bacon bits.  Serve warm.
